Killyhevlin Hotel celebrates opening of its new restaurant, KOVE
Friday 19th June 2015: UTV presenter Sarah Travers joined the team at the Killyhevlin Hotel last night to host a dinner to mark the launch of the hotel’s new restaurant, KOVE. The opening follows a £200,000 investment into the design of the restaurant which has been given a glamorous, contemporary Art Deco style make-over which takes full advantage of its unsurpassed views of Lough Erne.
The menu is a celebration of local and regional produce, comprising imaginative dishes made with the very best ingredients from the land, loughs and sea.
The four-star Killyhevlin Hotel, Spa and Health Club, which is a member of the Irish Country Hotels portfolio, has been run by the Watson family for almost 40 years.
Speaking at the event, joint managing director Mrs Jacqueline Wright said that KOVE would add a new dining dimension, not just to the hotel, but also to the Fermanagh Lakelands region.
“We are exceptionally pleased with the final look which sets the stage for a new food experience at the Killyhevlin Hotel,” she said.
The 100-seat restaurant’s design features impressive Art Deco style mirrored walls, along with tables made from rich, dark wood cleverly matched with chairs and banquette seating in colours that reflect the flora and fauna found around Lough Erne. An entire wall features floor to ceiling windows which perfectly frame the spectacular view across the water. The use of contemporary, illuminated glass dividers not only creates a wow factor when entering the restaurant, but also results in a more intimate dining experience.
Mrs Leigh Watson, also joint managing director of the hotel, said that the hotel has invested a significant amount of time and energy into creating KOVE.
“Right from the very beginning of this project, our vision was for a stylish space that took its inspiration from Lough Erne and the bird sanctuary situated on its shore,” she said.
“Chefs Kevin Watson and Trevor Shannon have both done a spectacular job in creating a menu of dishes that tell a story through a series of flavours, textures and techniques. Menus will change with the seasons and feature a host of local and regional suppliers who share our passion for simple, quality ingredients cooked and presented well.”
KOVE restaurant is open Monday to Thursday, 6.30pm – 9.30pm; Friday – Saturday, 6.30pm – 10.00pm; and Sunday, 6.30pm – 9.00pm.
